Rhubarb Smoothie – Alkalising

Rhubarb smoothie made with frozen (from raw) rhubarb to help alkalise and revive you. Its tangy and sharp with a sweet after taste and a cooling minty vibe yeh!

So this August I was lucky enough to be helping my dear friend with maintaining her mum’s garden. In which she had some amazingly HUGE Rhubarb so I helped harvest some and in return my friend gave me a massive bag full for the freezer. I then forgot about it until today! So I  started out thinking I would make some rhubarb ice cream in my nutribullet, but it turned into a smoothie, it was delicious and very cooling and soothing to my delicate tummy, helping alkalise and soothe my eczema.

Rhubarb Health benefits:
It is rich in vitamin C, vitamin K, B complex vitamins, calcium, potassium, manganese, and magnesium.
So it can improve digestion, optimize metabolism, improve circulation, vitamin K is though to help prevent Alzheimer’s Disease. Its also very alkalising and so great if you have eczema and are seeking foods that can help with an alkaline diet. For further health benefits read here

INGREDIENTS:
1 bowl – Frozen Rhubarb (frozen raw and uncooked, mine had the skin on)
I mug – Natural Yoghurt
I dessert spoon – Manuka Honey
6 – Mint leaves (no stalk)
1 cup – Milk (I used almond you can use what you wish)
Blend well in the Nutribullet or blender until all smooth, top with a mint leaf pour & enjoy!
